Strawberry Lemonade

2 lbs. Strawberries
8 cans Frozen lemonade concentrate
3 Cans Apple Juice Concentrate
4 lbs. LME
2 lbs. Corn Sugar
¾ tsp. Pectic Enzyme
5 tsp. Yeast Nutrient
1 ½ tsp. Yeast Energizer
2 ½ tsp. Potassium Sorbate
2 packets Champagne Yeast
 
 
BREWING INSTRUCTIONS:
Bring 1 gallon water to 175 degrees add following ingredients:
4 lbs. LME, 2 lbs. Corn Sugar, and 2 lbs. frozen fruit

Cook @ 160 degrees for 20 minutes.

Chill to 75 degrees add following ingredients:
5 Cans frozen lemonade concentrate
3 Cans Apple Juice Concentrate

Top off to 5 gallons with water and add:
¾ tsp. Pectic Enzyme
5 tsp. Yeast Nutrient
1 ½ tsp. Yeast Energizer
Stir well to aerate
Pitch yeast

Primary Fermenter for 7-10 days
Secondary Fermenter 7-14 days

24 hours prior to kegging/mixing add 2 ½ tsp. Potassium Sorbate to kill all remaining yeast.
Transfer to bottling bucket and add the following:
2-3 cans frozen lemonade drink mix (depending on how sweet you want it.  I suggest starting with 2 and taste it)
 
Be careful with this stuff.

3 Questions immediately come to mind:

1) Does the apple flavor come thru at all? Hopefully not?

2) Can you make it "straight hard lemonade" without the strawberries? Or will that unbalance the bitter/sweet?

3) What yeast do you reccomend?

Hey Southern. Answers to your questions are as follows:
1.) Not at all.  The apple juice is just to cut down on the tartness a bit.
2.) I don't think it would mess up the balance too much.  You can always compensate on the sweetness when you go to backsweeten.
3.) I always use the Red Star Champagne yeast.  You could also use the Lavlin EC-1118 as well, but I would suggest a champagne yeast bc of the abv.

One other thing with this recipe i didn't mention before, you can substitute limeade for the lemonade and cherries for the strawberries if you prefer cherry limeade.  The recipe is exactly the same.

Any particular thing to look for in the juice concentrate. Like "No Preservatives" or does not contain ___, etc?
There a preferred brand that you use?

Would be using a liquid yeast be overkill? I noticed the whitelabs/wyeast strains handle 17% abv.

On the concentrates, as always, make sure there are no sulfites, sulfates, or sorbates in them.  I just use the Winn Dixie (store brand) concentrates.  I don't think I've ever seen preservatives in the concentrates, but it's definitely worth checking.

I think the using the liquid yeast is a bit of overkill.  For me the difference would be $1.50 (2 packets of Red Star) versus $7 for a WL/Wyeast liquid.  I don't know for sure, but I would assume that a champagne yeast is good because of the high acidity of the must.  But a red wine yeast would probably work too.

After much delay, I'll be able to put this down early next week.

Another 2 questions: The frozen strawberries I'm adding - are these whole or diced or?

Also, do they transfer to the FV to get filtered out @ bottling or do they never make it to the FV?

Thanks for the Info Bubbha. I am also looking at a strawberry or cherry Limeade as my wife is allergic to lemon.
Would Strawberries and Lime work as well?

Bottled this baby today. Tasted great but no real strawberry flavors coming thru yet. It was a nice yellow coming thru the siphon. You could tell it has some alcohol in it, but no real "burn". Should age nicely over the next 1.5wks.

I know I am bringing this back to life from the thread graveyard, but I gotta get an update and see if there were any further experiments along this path?  Was there anything you would suggest changing on this recipe or were you satisfied with the final product?
I have mixed drinks about feelings.

There aren't any more changes that I would make to this. I have made at least a dozen batches of it and it's great. The only thing I would say is if you don't want to get 10-12% ABV, you can cut back on the sugar or extract. But this is a great recipe. The Cherry Limeade version  is great as well.

I made a variation of this one this AM.

5 Gallons Water
8 Pink Lemonade Concentrate
3 Cups Sugar
5 Tsp Pectic Enzyme
5 Tsp Yeast Nutrient
2 Tsp Yeast Energizer
and I used Cote' Des Blancs yeast.
I plan on back sweetening with 2 cans concentrate.  I am going to start with 1 can Pink Lemonade and 1 can of Strawberry Daiquiri concentrate.  I will add more as necessary.  Thanks for the info.

The daiquiri mix is an interesting twist. That might work out pretty well. You could have skipped the pectic enzyme since you didn't use any fruit, but whatever. Let me know how this turns out.
