Hi guys -

Yesterday I brewed up a quick Coopers IPA kit with added hops. Everything was going well until my 10 month old son started going crazy! Long story short, I wasn't able to cool my beer as I needed to tend to him, so I got it down as much as i could, around 100F... I know, this is not good but I had no choice but to pitch the yeast. I pitched the Coopers yeast but remembered I had a tiny 1 gal. Brooklyn Brewing IPA kit or something or other lying around. I grabbed that yeast and chucked it in the fermenter also. On went the lid and airlock and I'm praying for the best.

I have it in a cool room (62F) and there's a damp towel around it and a fan on. I checked the temp and it's now at 72F. But the airlock is going mental! Not blowing out but really going hard.

Question is: did I save it???

I also was planning on dry hopping, I've never done that before. I wanted this to be a really good beer but I'm worried.

Hey pghbrewer, I've had a similar situation in the past, I pitched in the high 90's before, and same deal with airlock, I managed to save this brew, ...... But, I will tell you that after 8 weeks being bottle conditioned I still had strong esters in the taste, I decided to leave the remaining 35+ bottles and brew up something else, revisited those after close to a year of conditioning! and they tasted great no "off" flavour whatsoever, but keep this in mind I've also been told that by some people that esters never go away. This particular batch turned out to be very drinkable. So it worked for me. Long winded sort of helpful answer to your dilemma ???? Lol Cheers 17

I couldn't agree with you more.  I have two batches that I am currently waiting on, and 23L of Red Wine.


I pitched too high about a year ago, ended up getting no yeast activity.  So if things are humming along like it sounds like...you may be ok.  Might get some off flavours as brewmagoo stated... depending on the yeast it might not be super estery.  Keep us posted.  CheerZ

Most of the ester production happens during the growth phase of yeast (the first 24 hours).  Unfortunately, I would be surprised if this came out as one of your better batches. :(

I did something close with my brewmaster beer I submitted that is being judged. I pitched at about 90F but it didn't affect the taste all that badly. It actually helped with the fruity esters the yeast made. I guess it kinda depends on the yeast that you use.

I've just pitched a 5th gen. US05 slurry @ 32C, basically coz i couldn't be arsed waiting any longer. I've been told most of the aerobic and anarobic (sic) activity occurs in the first 24-48hrs, and have pitched this warm before with no 'off' flavours or esters.

                   - Blueberry Mead
                   - Coopers Bitter
                   - Sweet Ambers SMaSH Ale

that was on the warm side, did it cool down to your fermenting temp?
if not you might get some hot alcohols in the taste.
I heard some brewers pitch warm for lagers and drop the temp down.
Chris White said in an interview that pitching warm promotes yeast growth.
I like to pitch around 60F for my lagers and drop to 50F for fermentation.
You should be fine, US-05 is a beast.

Just checked it and its now @ 24C, 12 hours after pitching. Perhaps a bit high for my liking but i did let the yeast get to around 24C before pitching as not to shock it too much. So i guess we'll just have to wait and see. As you say US05 is a forgiving yeast and i've never had a problem doing it this way before. cheers.
