So, I made a New England Style Cider that is delicious but frankly I think it would be perfect for Applejack.  So, just so I know I am doing it right...

Freeze the gallon, turn upside down in another jug outside the freezer and let the juice drain out until nothing but clear ice is left in the original jug. 

It's that easy?  On the other side does anyone do anything special with the cider brewing to make the Applejack a better flavored or just better more potent flavored Applejack?
I have mixed drinks about feelings.

You got it, you can freeze again if you want. Also adding some oak or hops as posted above for extra flavor

I've seen in other posts where guys will drop in a cinnamon stick to the applejack as well. 

I still think we all need to go to Steamy's for the taste testing of his hopped applejack.

I added cinnamon to the cider while it was fermenting, I boiled it for 5 minutes in about 500mL of juice and added it. Smells so great.

17 BIPA

Bottle aging:
Oaked sour ale '16
Coffee stout '15
Oaked apple cider '15
Barleywine '14

Keg 1: Golden ale
Keg 2: Not-17 BIPA
Keg 3: Not-17 BIPA
Keg 4: Mongrel //
Keg 5: EMPTY :(

Mini keg 1: Golden ale
Mini keg 2: Empty!
Mini keg 3: Damo's BIPA

You will lose some aroma to CO2 blowing off, but when it comes to flavour not too much.

Most pumpkin ales are spiced in the kettle

Also - I added after primary fermentation, the extra juice was all that fermented while the quills were in the cider.

I like the Citra best. First attempts were way off the tracks because I was working with a 2 Liter bottle of cider and 1 oz. of hops will clean your sinuses!
There are several cider threads going now, but on one of them, I listed my hops that are in the freezer. I will need to pull 4 more and do another taste test. 17!
