Honestly it disappointed a bit. Didn't get very pungent on the heat, and the chili was way too overpowering. I still prefer Bhut Jolokia over the Birds Eye in beer. It was a fun experiment though.

[/quote]Actually, I've found the same thing, not that I've tried brewing beer with chilli, but in reference to cooking, you tend to get one or the other. If you get the beautiful fragrance & flavour, you won't get the heat, & vice versa.

On Monday I think i will get the two brews done i've procrastinated over for the last 6 weeks. Will get my Kölsch yeast starter on the go tomorrow before i head off to work so I'll have to brew it. Think I'm gonna do a Black IPA as well. Then sneak an order in for a 2nd keg without the missus finding out.

Happy Brew Day everybody! 

Just racking a belgian tripel from my primary to secondary while I'm mashing my grains for an azacca IPA I'm making today. 

12 lbs 2 row
1 lb caramel 20L
1 oz Azacca Hops (12.2 alpha) 60 minutes
1 oz Azacca Hops 20 minutes
1 oz Azacca hops 5 minutes
1,000 ml starter of harvested US-04.

pretty basic recipe as I want to experiment with the azacca.  never used it before.

I've never brewed a black IPA, but it sounds great. Do you have experience with that already, Stivius?

Done my first early this year with centennial cascade and simcoe turned out well. Been finding that my mash temps end up a bit lower than i aim for, so it ended up a bit lighter bodied than I had planned but it turned out to be a happy accident. Going to add chinnook to the hop bill this time round to try and add a more piney flavour and aroma. Maybe a keg dryhop of simcoe after the primary dryhop. My original recipe is stowed on the HD of my old PC that crapped out on me in oct. Think I'll go with what i've put together on beersmith and see how it goes if i dont think its as good I'll be doing some pc rebuilding to get the original recipe back and try again. It's not a CDA it's a hoppy dry stout. Being Irish that sounds like a good thing.

Got my Stout and my Christmas ale bottled up, just got to wait patiently now. So Brewed a Raspberry Wheat ale today, going to let it ferment out fully then rack it into a new carboy and add 2kg of raspberries as well as 28g of cascade let it sit for 2 weeks.

Going to brew another beer in the morning not decided 100% yet but it will be another wheat ale.

Happy Brew Day crew! 

Just mashed in my grains for a vanilla porter.  I've been extending my mash to 80 minutes to get a bit more out of it.  Seems to help.... 

I'm going to pitch the wort directly on the us-05 yeast cake i've been using for my IPAs.
