Hello fellow Brewers, I'v got it into my head to make a coconut stout using coopers OS stout kit and some light/medium dried spray malt the question I have however is

1) Has anyone used coconut in a brew and how did it turn out?

2) How much coconut did you use

3) what did you use (coconut water, coconut chunks, coconut flakes...)

4) lastly how did you use said coconut?

Hope some on has some advice on this one as if the stout goes well I'm also thinking in the lines of lightening the style to a pale or IPA depending how the stout goes of course.

Never used Coconut but i have heard of it used in beers.
here is a link from the madfermentationist it was one i was looking at for a winter brew.
just havent gotten to it yet.

Thanks Combat its certainly some food for thought. Thinking of possibly brewing it up this weekend or next fingers crossed anyway providing I can get the temps I want.

Coconut is quite fatty, so be prepared for some scum in the bottle and potentially poor head retention.

When I make coconut liqueur there's always a layer of solid fat on the top when I put it in the fridge.
Fermenting:
17 BIPA

Bottle aging:
Oaked sour ale '16
Coffee stout '15
Oaked apple cider '15
Barleywine '14

Keg 1: Golden ale
Keg 2: Not-17 BIPA
Keg 3: Not-17 BIPA
Keg 4: Mongrel //
Keg 5: EMPTY :(

Mini keg 1: Golden ale
Mini keg 2: Empty!
Mini keg 3: Damo's BIPA

im not sure but i think you could do the vodka trick to get the flavor. soak some coconut in vodka for 3 weeks then dump the vodka into the brew

I'm fairly sure newtohomebrewtom makes a coconut IPA, that's now commercially produced at Idle Valley Brewing.
I'm fairly sure all that's added is flaked coconut but I'll have a look around for the recipe. Cheers

im not sure but i think you could do the vodka trick to get the flavor. soak some coconut in vodka for 3 weeks then dump the vodka into the brew

If you did this, you could put it in the fridge for a few days to let all the fat condense and float to the top, you can scoop it off before dropping it in the beer.

Ok thanks guys that's given me a few ideas to work with. Was wondering about the head retention with the high fat content of the coconut I shall do some research into this before I brew this bad boy up.
