Hey guys, new member here. I've been a fan of craft beer and home brews for many years. Just recently decided to jump in and start myself. I have a few gallons of JAOM fermenting away and wanted to make a cider. Here is what I did.
4.5 gallons Mott's all natural apple juice.
4 lbs brown sugar
I cinnamon stick broken up by hand
1 cup all natural cherry juice
1 package red star pastuer champagne yeast.
2 boxes raisins for nutrient.
OG came in about 1.080.
Should I assume a 2 week fermentation period? I'm aiming for a ABV between 13-15%. Any feedback would be great. Thanks and I'm happy to be here. 17!

Hi and welcome to the crew. I have only done one cider and it was pretty shit so I am no expert but I think the guys who make them regularly leave them go for 3-4 weeks. cheers.

welcome aboard

when i do ciders, i usually let them sit for 1 month before doing anything.
i have used that same yeast and it will take it down to .995 no problem.
you will have a very dry cider, if you keg no problem just back sweeten with some frozen concentrate.
i usually will add 2-3 cans depending on my mood.
sounds like you will have a nice strong cider at the end.

With the extra sugar I added I'm not seeing much fermentation after the first 28 hours or so. Airlock isn't bubbling yet but you can see a tiny bit of activity on the surface. When should I consider re-pitching? If I have to do so should I make a yeast starter so I know the little guys are active going in? If I do that, should I oxygenate the mix more before pitching or just pour it in and let it work? Oh..I was going to take another gravity reading around the 48 hour mark to see if there is any fermentation. Thanks again!

Are you sure your lid is on tight? Or the airlock isn't leaking?
If I remember correctly that yeast was a very fast yeast and put off a strong smell.
I called it apple gas.  :o
I would check the gravity if it has dropped I would leave it for 5-7days and then take another reading. Again if it has dropped more just let it ride for another 1-2 weeks.
Patience is the worst part of brewing  ;)

Well. It's fermenting just fine. My rookie butt simply didn't have enough water in the airlock to make it bubble. I added a little purified water to get it to the fill line and it's bubbling once every second or so. Lol

use Starsan or vodka in your air lock just in case it gets sucked back in the fermenter your safe.

So it seemed to stop fermenting last night. This evening I took a sample and the SG is down to 0.995. Brewers freind gives me a ABV of 11.16%. it tastes like a nice dry wine at the moment. Plan to back sweeten it and bottle condition for about a week,  after the desired carbonation is reached I'll pasturize the bottles. I do plan on filling a couple 2 liters to freeze for apple jack.

Bottled last night. Minus two plastic bottles filled for apple jack, and two glasses for my roommate and I to enjoy after bottling, the batch yeilded 42 bottles. Ended up using two cans of juice concentrate for backsweetening/priming. Tasted good out of the gate, should be quite enjoyable after a week. Thanks for the feedback everyone! Thinking of following this up with a nice Stout.
