Dumb newbie needing advice.

Greetings, I was Hoping for some advice. I fermented some apple juice, with brown sugar, cinnamon and nutmeg. I used a Fleischman's bakers yeast. Trying to make a holiday cider. It fermented for 7 days. I'm new so I had to use a ballon as my airlock (I'm a broke kind of guy) and it was placed in a room that's always about 80 degrees. OK finally my question. I tasted the mixture after a week and it had a very hard kick to it. So I added more juice and spices. But the fermented stuff is very overpowering still and slimy. I mixed it all together and bottled it anyway and put in the fridge hoping to kill the remaining yeast. Will I need to also pasteurize the mix and is it normal to be slimy. I'm close to throwing it out. Thanks for any help you can give me. :'(

I have made a few ciders, but i never had slim in them.
not sure if it is slime or is it trub at the bottom?
is it brownish?
to get a sweet cider you will have to kill the yeast. many ways of doing it.
1 way is to add some potassium-sorbate to kill yeast. putting it in the fridge will put them to sleep but some may wake up once you take the bottles out and leave at room temp.
when i do ciders i usually let them sit for 3-4 weeks then rack or keg.

Thanks so much for the information. My cider was brown but I'm hoping it was just the cinnamon and nutmeg combo. Maybe the spices did something off. I pulled and bottled a hard Root beer this morning that also had the Fleischman's yeast and regular water (without spices). It turned out good once I did some back sweetening. I guess I'll let it sit in the fridge for a couple weeks and see if time improved anything. I'm just afraid of getting the family sick.  Once again thanks for the help.

glad to help.
always trust your taste buds they wont steer you wrong ;)
worst case if it is a bad batch you will spit it out :o i havent heard of anyone getting sick from drinking a bad beer. but i know alot of people who have been hungover sick from good homebrew :)
cider is more like wine then beer. just becareful if bottling, save some plastic bottles.
I use 1l seltzer bottles for cider, they can take alot of pressure.

If you haven't carbonated it already, you could try to clear it with gelatin. As combat stated, you don't kill off the yeast by putting it in the fridge. It will come back to life again when the temp rises and can give you bottle bombs.

If you try gelatin, use this method:

Be aware that the trub after using gelatin is less solid, and thus calls for more delicate handling when transferred.

I just read your update to the "ask Craig" section. I would say that you either have a water problem (too much chlorine) a bleach problem (no rinsing good enough) or it could be coming from inside the balloon you are using as an airlock. that's where I would begin looking to resolve your problem. cheers.

Thank you very much for the help. I will have my water checked anyone know of any good info on water quality. I unbottled the batch and added Potassium Meta and Pot. Sorbet. to the whole thing and gonna let it sit a day then rebottle. But before I did it poured smooth out of the bottles nicely and tested kind of good. Well getting there. Its been 2 weeks and getting better. Thanks guys for all the helpful information.

I read your reply to Craig also.
I had bad luck with bleach, i used it to clean a fermentor and it ruined my next batch.
it had a medicinal taste(Bandaid flavor :o )
the bleach could be the problem, if you sniff the fermentor and can smell a hint of bleach rinse more.
see if you can get some sanitizer like starsan, iodophor or one step
