Hard Lemonade - Back Sweetening and Carbonating?
« on: June 13, 2017, 04:34:30 PM »
Just finished fermenting out some lemonade, final gravity reading - 0.999. The lemon flavouring is really good, but it is too bitter to drink.
I do want to end up with a carbonated beverage, but I do not have a kegging setup. So i can not kill off the yeast, sweeten and carb that way.
My question is: Whether there is a artificial sweetener/non-fermentable sugar that could take care of the bitter/tart taste without affecting the flavour too much (dont want a chemical tasting lemonade). This way I can just add the needed amount of fermentable sugar to obtain my carbonation.

Thanks

Welcome to the crew and forum!

I'd go for stevia, as combat suggested. Just make sure it's the white stevia and not the brown, as the latter can give a licorice-like aftertaste.

I would also add sugar for carbonation to each bottle individually. I would suggest you treat it like a cider and go with a lower lever of carbonation. 5 grams of dextrose (45g white table sugar) per liter should be good.

Welcome to the crew. I told you this was the right place. (I work with this guy BTW gents, I planted the seed of fermentation in his ear and created a madman)

Thanks, I will give it a go, how is nutrasweet in terms of taste? I know stevia can have an artificial off flavour?

i have only used nutrasweet once in a cider, turned out ok.
but i didnt make sweet either only added maybe 1-2tbls i think for a 2l bottle
id stick with the stevia, I've heard a lot more people use that.

I've used white stevia in an apple cider and it turned out pretty well and did not affect the flavor to a degree that I felt was bad. I could not truly say that there was some hint off funny stuff in it, just a fair bit of residual sweetness that balanced it nicely. I didn't overdo the sweetening, though.
