Is this brew okay, for my next brew?
« on: January 30, 2018, 04:41:02 PM »
I am not sure of much of the Mango puré i should add. I got 2 cans of 850g (1.87 Ib) each. Should i dump in both after high fermentation (3-4 days in primary)

Neither am i sure about the OG outcome after adding the mango puré.

(Brand: Masala magic)
Carbs at 23g /100g.

Not sure how much is fermentable here.

And one last but not least thing...
The can of mango has Citric acid in it.., will this ruin any further fermentation?

i would wait 7 days before adding any fruit. in fact i wouldnt add it to primary, i would put the fruit in secondary then rack the beer on top. it will ferment the sugars in the fruit so I would rack again to let the fruit pulp settle out.(i hate transferring myself due to risk of infections) also some kind of clearing agent might be a good idea.
hope that helps

I would consider a hybrid method of what Combat mentioned. Wait at least 7 days for primary. Add the puree to primary, and then consider transferring to secondary after the puree finishes fermenting. If you keg, you could skip secondary and let it settle out in the keg. You have several options. As far as gravity points gained from the mango, it's actually not that much really. Bc there is a good bit of water in there, you may gain a few points on your gravity. So call it an extra .5% ABV and call it a day.
Tap #1 - Cranberry Cider
Tap #2 - Feedback Loop Berliner Weiss
Tap #3 - Planned Obsolescence NEIPA
Tap #4 - Hard Grape Soda

Thank u guys!

I think i will go for your suggestion  BuddhaNole, because i only got one fermenter.

For clearing i'll use gelatin.
I also use whirlfloc in the boil, but this i belive, won't help in later additions...?

Jazz if you can get mango extract that might be the way to go.  Using the raw fruit might be messey and entail some risks.   That being said...looks like a beer I could enjoy!  Keep us posted!
