Wild Wit Recipe

I’m calling this my Wild Wit beer, using the Milk the Funk reverse sour method.

47.5% American 2-row
37.3% Wheat Malt (German)
10.1% Flaked Oats
5% Rice Hulls
.1% Magic

No hops

O.G. 1.052
F.G. 1.008

Mashed at 154
Boiled for 60 minutes (I believe)

The Yeast Bay Saison/Brett blend I and TYB Beersel Brett Blend for primary
Day 3 added 8 Goodbelly Oat Powershots

Fermented for 2 months. Kegged 5 gallons with 6 ozs of Citra hops. This beer was really great. Had a very assertive sourness (not over the top) and a very fruity funkiness that I could only describe as overripe melon and citrus. Tremendous summer beer for those hot Florida days.

The half that is pictured was racked into a 6 gallon carboy with 5.5 lbs of blueberries and 3 lbs of raspberries and left to referment for about 3 months. Fruit character was right on, very assertive without taking over. I couldn’t be happier with how this beer turned out. So much so that I just ordered enough yeast to make this at least 2 more times. Thanks to everyone in this group for all of the knowledge that made this possible. Cheers!

The great thing about this one is that it doesn't take that long. At least the dry hopped version doesn't. Adding fruit doubles the times. Let me know what you think if you make this.
