Maintaining Fermentation temperature at 68 degrees F?

Hi all,

I am brewing a Smoked Porter grain kit with dark malt powdered extract. The directions require an initial fermentation temp. of 68 degrees F. Is this even possible without refrigeration?  :o  My entire house at this time of year maintians an ambient temperature of 80 degrees F, without the air conditioner, even in the basement.

The batch is holding at 78 degrees F right now. My question is, will this harm the batch not being at 68 F? Initial fermentation is indicated to continue for 2 weeks. I am using S-04 yeast.

Well, that does seem a bit warm for my liking, however I've never used Safeale S-04.  Did a little researech and there are comments that even with high temperatures such as yours, it doesn't give any off flavors ... 

I quote.."We use this yeast in our brewpub here at Cave Mountain Brewing Co. in Windham NY. It ferments quickly without off flavors even when ferment temps get in the high 70's and low 80's. Homebrewers with problems with high ferment temps should try it if their looking for a "house strain". Can be reused at least 5 times without changes to it's profile."  Unquote.

another guy uses this strictly for his imperial stout.  I may want to try this yeast out!

i have used that yeast and it does ferment very quick.
i still waited 14 days in primary.
have you tried a plastic tub, with a old tshirt over the fermentor filled half way with water with a fan blowing on it? i did it once when my room was 76f and it maintained 70f, i used frozen water bottles in the morning then trade out in the evening with news.
you might try that.

Your first mistake was using bread yeast. You need to get some Brewing yeast. Entirely different strain that is made for brewing, not baking. You are probably not far from a brewing supply store, you can pick up a packet for like 50 cents or less.

I never had a problem myself with the temperature cause i live a stone throw from the arctic circle, so i had more problems with it getting to cold so i keep an heating thermostat in my brewing dungeon, but I always wanted to build a fermentation locker out of an old fridge cause its insulated and i could keep an heating element inside it as well as an thermostat for the fridge it self  so if it gets too hot it cools down and if it gets too cold it can warm up, would save tons of money on the electric bill and my sanity not having to worry about temps.

A thermostat and a fridge that can fit a 30l bucket is not that expensive so maybe it could work, I say its not expensive but priorities always come in the way for myself, guessing op got hes reasons for wanting a easier fix.

Didn't have much to add to the conversation cause everyone had so many good suggestions that doesn't need money to do.

Do yourself a favour, pick up an old fridge and buy yourself a STC-1000 or an InkBird ITC-308 or whatever you can get your hands on. Temperature control along with proper sanitation is vital in achieving a result you'll be pleased with. cheers.
