Guys,

My last batch was a Young’s Definitive Bitter, and has now been in the bottle for a month or so, and I have been, ahem, sampling bottles as I go along.

Just opened another tonight, and the one thing that strikes me is that this beer has developed a rather odd aroma, and there is no way to state this, but it’s a bit like the smell of sick!

The beer tastes OK, the beer is lovely and clear, and has a nice hoppy bite to it, but the aroma is really off putting.

Anyone had this before?

This was extract + 500grams Medium Spraymalt + 600grams of dextrose, 23 litres and in primary for 14 days and then batch primed and bottled. Brew was kept at a constant temp of 19deg throughout the fermentation. Bottles kept in dark and cool place.

It really has put me off, and I don’t want to tip it away!

There are a number of off-aromas described that are different things:

Phenolic - Plastic adhesive strip/medicinal aroma is from water that is chlorinated and reacts with the yeast.

Sour/Acidic - Tartness or sharpness which could be some sort of infection from a bacteria.

Vegetal - cooked canned or rotten vegetables. DMS, but in this extract brew it seems unlikely.

Oxidized - Musty, stale, cardboard, papery or sherry like. This is from introducing too much O2 after primary.

It is hard to say sometimes what it is. I have had a few dumpers in my day that I never really locked down what the issue was. Home brewing can be a fickle hobby. If there is a pattern over time it may become easier to solve but hopefully it is just an isolated incident.

What it is: Butyric off flavour is a highly noticeable flavour that stinks of baby sick. Unsurprisingly, it is considered an off flavour in all beers.

How it is caused: Butyric Acid is caused mainly by bacteria during the wort production phase but it can also be produced by bacteria when beer becomes spoiled once it’s been packaged.

Thanks all - I have found the aroma is a lot more pronounced at room temp, but when chilled down (unsurprisingly) there is little to no smell.

The beer tastes fine, so I am not tipping it away just yet!

I take sanitisation very seriously, and I made sure the fermenter, equipment and bottles were washed and sanitised in StarSan, but, this was the first batch that I had a blow out, and I had to swap over the airlock every 2-3 hours (didn’t have a blowout tube), and there is a possibility of a minor infection I guess, even though I sanitised the airlock every time.

Anyway - going to drink my way through them, and hope for a better batch next time!
