029 Kolsch yeast
« on: December 28, 2017, 08:14:10 PM »
so i've a Kolsch fermenting away at 17.7c been going for nine days. So should i up the temp for a diacetyl rest for a day or two and start to slowly drop the temp? Kind of chickened out of going for a straight lager and thought this was a slightly easier way to get there. Have i made a terrible mistake? I've bitten off more than I can chew haven't I.

is it still showing active fermentation?
I tried a Lager last year and wasnt happy with it. I am going to try again though.
if there is still some fermentation ramp it up 10 degrees and let it go a few days.
then start dropping it down 5 degrees until you get down to 0-4c leave it there for 3-4 weeks, if your going for a Lager.
fermentation temp range on that yeast is 18.3 - 25.5 on Whitelabs data sheet.
naa you didnt bite off more then you can chew, its great to try new styles. at the least you will have learned something from it.
my Lager had a buttery flavor so i racked it on top of a us-05 yeast cake and let it go for another week. it was ok but not what i wanted. learned two things, 1 make a big starter for lagers, 2 racking to a yeast cake can save a beer  :)
keep us posted on how it turns out.

Fermentation has dropped off gonna leave it at 22.5c for a couple of days like you said then larger it. I didn't transfer this to secondary, I don't believe in secondary because i'm lazy and the wife gets annoyed when buckets and siphons reappear a few days after a brewday.

ok had 5 days at 22c gonna start the drop, would have left it a couple more days but i remembered why I quit using this fermenting bucket. There are two small recesses half under the point where the handle is attached and the soft plastic lid seals. As I shake the bucket to oxigenate sometimes there is a bit of leakage around these points that catch and hold a tiny bit of wort, seems i didn't clean them well enough and noticed a tiny bit of mould ,so I've starsanned and cleaned them. It doesn't look or smell like its infected the batch but think i'm gonna use that brulosophy lager method. Just drop the temp hit it with gelatin at 10c and Keg 24-48 hours later and let it cold condition in the keg. Then get rid of that fermemter.

OK had to much going on last few days taking the parents to doctors appointments and long days at work so chanced dropping the temps. Tonight i thought I've been caught out before by acetaldehyde so as it's dropped to 10c pull a sample take a hydrometer reading and taste before doing the gelitin. Yep rushed it, no buttery taste just a bit of grassy green apples. Ramping the temp back to 20c, giving the yeasties a rouse once up to temp and giving it a few more days.

Kegged in the kegerator and on gass. Will give it some gelatin tomorrow and let it carb up. I think the apple like tones might be the yeast been reading up and a few have noted it can have a slight fruity apple note when fermented at the higher end of it's range. Will post a pic once i get a pint poured, for tonight I drink Coors only because i got a case for free.
