Belgian Leffe All Grain, but what yeast?

Hi

I bought a all-grain kit klone of an Belgian Leffe. i got it for a good price since there was no yeast With the pack.

what kind of yeast is good for this kind of beer/ale ?

i have three kind of yeast in stock: 10g californian Lager yeast , HMB yeast from Muntons and i have 11,5g US-05.

reccomendations?   others?

i would say a Belgian yeast strain, maybe WLP530 abbey ale or Mangrove jacks M47 dry yeast

i could not wait.......  had to do it today...     so i used my us-05 :)



today i made my first ALL-GRAIN BEER!    Leffe Blond (clone) with us-05 and extra cascade hopps... hehe

looking forward to taste it... in a month ore two ;)

Well, you can't go wrong with an all purpose yeast like US-05.  In a way, it may be best since it's definitely less tempermental than most belgian strains.

well, then i`m glad i made that choice. it`s bubbeling evenly and has already a nice krausen.


will it do mutch difference to put the beer in a secondary fermenter after 7 days?

the instructions says so, but i have never bothered with than with my ecstracts, since this is my first all-grain i`m open for advice.

Don't bother with secondary. The downsides out way any benefits.

Tap #2 - Feedback Loop Berliner Weiss
Tap #3 - Planned Obsolescence NEIPA

yeah i skip secondary too, unless i am adding fruit to let it age. but that was for sour beer :)
i think some guys add fruit right to primary, i did a blueberry porter a few years back and i did rack on top of them, didnt want to dump them on top and splash the beer and add O2.
i usually do primary 14-21 days then keg/bottle, 21 days if im being lazy  :D

checkes the sg today, and it is at 1009sg.... is the us-05 really that fast with a all-grain?

yes sir, but i always leave it for 14days, just to clean up.

im thinking that the faster u bottle, the less chance for yeast taste???

you would be happier waiting the extra days for the yeast to clean up after themselves  :)

it`s pretty clear actually... i washed some bottles today instead.  i will wait one or perhaps two days.. then.. :)
