the leffe was in the bucket for 14 days, in bottles for aging now:)

the wort tasted wonderful, a bit milder than the original (because of the yeast i think) but that is ok with me. i prefer that:)

well 14 days until test tasting:)

Just to clarify about fermentation. Even when SG is at target and the yeast has finished eating sugars it is still active for a while longer. When it eats the sugars it produces a whole range of byproducts, alcohol being just one of them.

Diacetyl and Acetaldehyde are two of the most common factors for off flavors in home brewed beer. It is easily remedied by leaving the beer for a few days longer because the yeast will actually eat that up again. This is just a couple of examples of what goes on after target FG is reached, and what we refer to when we say “let the yeast tidy up”.

The Leffe Blond turnes out great!. i have just a few bottles left, and planning to brew a new batch.

it is my best beer so far:)
