All Grain number two....

Hello fellow brewers

Today i was at my local brewer shop, and since i have some extra days free from work i desided to brew another all-grain.
tomorrow i`m going to bottle my nr1 Leffe Blonde, so there is space for another one.... soooo..
the story is that i tasted an "all grain" wheat from a frend some time back, i tryed to brew a wheat beer from muntons extract wheat, but that was not as good..... (but drinkable)   so i have borrowed a brewing machine.... and bought an "all-grain" wheat beer resipe with hops.
it followd an Bavarian wheat yeast -m20- (mangrove)     ...is this better than us-05?  and schould i rehydrate it ore not?!

yes for a wheat beer you want to use a wheat yeast, otherwise you wont get the clove and banana notes and some yeast haze. that said we are homebrewers so rules dont apply ;) but i do love my Hefeweizens that hazy banana/clove goodness.
and i would re-hydrate the yeast

If you use the Bavarian wheat M20 yeast from mangrove jacks and ferment at 18-20c you may want to use 2 packets as the attenuation is medium or make a yeast starter

Safale Us-05 is a American Ale Yeast producing well Balanced Beers but like Combat32 says wheat beers needs wheat yeasts

do not have two packs....    don`t have time for yeast starter...     but im gonna rehydrate for once:)

i use about 8oz of boiled and cooled water in a sanitized glass. start that while i am bringing my strike water up to temp. usually by the time im ready to pitch it has a nice creamy layer and i give it a good swirl before pouring it in.

rehydrated the yeast, followed the instructions on the package and with combat32`s hint with a swirl it helped alot.. The airlock started up bubbeling slowly after 6 hours, and was going steady after 12. and now 24 hours later it`s going like its crazy. just the way i like it.

i like to sit with the fermenter 5 min every day, just to hear the bubbles:)

botteled the hefeweizen yesterday..

oh man.. the worth tasted very good.  this one carbonated and aged will be good:)
