Hi everyone,

Happy Home Brew Wednesday!!

I started a new batch last week, a Coopers Brew A IPA, and I think my fermentation might be stuck, so wanted to ask your advice!

Brew
Coopers Brew A IPA Extract Kit (single can)
1Kg of Muntons Brew Enhancer
SG: 1.048
Volume: 20 Litres
Pitching Temp: 21 deg/C
Room Temp: 20-22 deg/C
Yeast: Coopers Kit Yeast

Problem
Did the usual with this kit, sanitised everything, followed the usual routine, and pitched the yeast.  Not a single sign of anything going on for 48 hours, which is a bit strange, but not unheard of.  At 72 hours, still nothing, so started to worry, so I added a single (level) teaspoon of Yeast Nutrient (powered type) and overnight fermentation kicked off.

It has now been a week, and despite all the usual and positive signs being present (Krausen ring, foam and bubbling airlock), everything has stopped approx 2 days after adding the nutrient.

So - in time honoured tradition, out comes the hydrometer, and I took a reading this morning, and I was very surprised to see that it has barely dropped from 1.048 to 1.043/1.042.

I know that it is still fermenting as all the signs are there, but it has worried me that the gravity has not moved much in 7 days.

The brew smells, looks and tastes perfectly fine.

Advice?

I plan to leave the brew in the FV for the next 2 weeks anyway, and let it get on with things, but does anyone think that maybe it has got stuck or that I am worrying over nothing?

The taste of the brew is still sweet (but not as sweet as SG point), and I think there is no infection going on - so a bit stumped!

Advice as usual is greatly appreciated.

i would pitch some new yeast and re-hydrate it.
did you do that with the original yeast? i have been listening to Brew Strong with Jamil Zainasheff and John Palmer. Jamil has said multiple times to re-hydrate dry yeast, he said basically when you use it dry half the yeast die from forgive me i forgot the wording but basically shock.
if it was the coopers yeast that is usually a beast and kicks off fast. a fresh pitch might stop some off flavors from under pitching. but if you got some wild yeast in there it may be to late.

I think Combat is correct. All you can do at this point is pitch fresh yeast. This sounds to me like the Cooper's yeast was old or something. Just do something as soon as you can.

Thanks everyone, and no, I did not rehydrate the yeast with the kit, just pitched it on top of the wort as usual.

Come to think of it, this kit I have had a while and it may have been near its best before date (should have checked) and maybe the yeast was past its best!

I have another sachet which is good until 2021, so I am dehydrating now and will pitch soon!

Pitched new yeast yesterday afternoon, and taken a reading this morning and we are dropping nicely, now at 1.038, which is a good sign.

I dug the packaging out of the bin yesterday too, and I found that the kit was good until March 2018, so I suspect the yeast was well past its best and hence the stalled fermentation.

I nicked the yeast from another kit (Woodforde Nog) which is going to be brewed next, but what shall I replace the yeast with?

Safael US05? Or a Nottingham yeast?

great to hear.
US-05 or Nottingham are both great yeasts.
I will say i like US-05 for this reason, i have only had one blowout with US-05 and multiple with Nottingham. what style kit is it?

It's a dark ruby red ale, somewhat an award winner in the UK.

The current brew is going good guns now, as watching the sample in the hydrometer jar, there is a lot of fizzing going on, so clearly the new yeast is doing its thing!

I am thinking US05 will be a safe bet!

Update, now dropped to 1.028, so things are motoring along nicely!

Just ordered up some Safale US-04, as reading the descriptions, it seemed to suit the next brew more than US-05.

The lesson learned is always use your beer kits well within the best before date!!

Can't wait to try this brew as the beer fridge is empty!!!!

yeah US-04 or Nottingham would be fine.
one other thing with a kit beer dont be afraid to buy new yeast to use instead of the kit one.
i kept my Coopers yeast for cider and some experimental beers.
and another tip open the kit and store the yeast in your fridge  :)

Thanks everyone, and today's update is that we are now sitting at 1.018, so it has made leaps forward since earlier this week.

Ordered up some US-04 to use with the next brew!

Now going to leave the FV for the next 7-10 days for things to bottom out and a chance for the yeast to clean up after itself!

Then onto bottling which is not my favourite activity but do not have the space or drinking capacity to keg it!

Final update!

FG has bottomed out at 1.010 for the last two days, so today I have batch primed and now have 38 bottles in a dark and warm corner to prime and condition!

My inner tinkerer has come to the fore again, as this time I have used Demerara sugar to prime instead of the usual corn sugar!

Might turn out horrible but think it might be OK!

Used an online priming calculator to work out the right amounts for the beer!

A few weeks and I shall crack one open!
