Hi all I'm wanting to branch out from doing just extract kit I'll be using coopers canadian blonde I have picked up canadian  2 row and Gambrinus honey malt was thinking to add 100 grams of each to my kit  I will be using my extract with 500 G corn sugar and 700 G light dry malt extract any thoughts on this greatly appreciated

sounds good, are you going to try and do a mini mash or just steeping?
the 2 row should be mashed IMO, but i have steeped it too.
2 row is a base malt that we get our sugars from  :)
specialty malts like crystal 10l-120l and chocolate malt are great for steeping.
if you steep them at 150f-170F for 30 minutes you should notice a difference in your beer.
it should have a little more body and some freshness to it.
go easy with the honey malt, it tends to leave some sweetness behind. at least thats what i have found. did you get the grains crushed already?
keep us posted on what you do.

That brew sounds like is will be nice. I recently did a Coopers Canadian blonde with just a steep of 150g of Crystal 60, all DME and some simcoe hops, turned out fantastic. Using an alternative to the Coopers yeast is a good idea as well, Us-05 is a great yeast to use over the supplied kit yeast. Used as a base these kits can be tweaked to get a great brew.
Let us know how it turns out.
