Brewed my pumpkin this weekend

Even though it felt like 1000 degrees out this weekend, it's hard to believe it's time to brew Pumpkin Ale so it will be ready for the Fall.

It was way too hot outside for one long brew day . . .

So I mashed and sparged to the BK on Saturday, and then did the boil with all of the spices on Sunday.

i hear ya, i brewed last weekend and it was humid outside and hot.
and the summer is flying by as usual.

The fermentation is doing nicely after 24 hours . . .

I'm lucky that despite extremely hot or cold temperatures outside, the un-finished part of my basement always stays around 68'f / 20'c

It was recently pointed out by Comabat32 on another post how important it is to take notes about your brew day.  Even if your brew day goes totally right, or totally wrong.

The reason I didn't start out with a 2-piece air lock for this Pumpkin Ale is because of my past brewing notes.

Notice the before and after pics of what can happen in just 48 hours, even on a brew that I really don't consider a high gravity brew.

what yeast did you use?
I brewed my Hefeweizen 3 weeks ago and usually WLP300 is a beast and blows out, not this time though. it only formed a inch and a half krausen and its not as hazy this time. still got the Banana notes and some clove which is what i shoot for.

what yeast did you use?

I used US-05 in a 1000ml least starter.

But it's a great coincidence that you mentioned your Hefeweizen and the WLP300 yeast.

The only reason that yeast number sounded different to me is because I just had the recipe out for a Paulaner clone that I sort of like and was about to brew again.

I think I'll try your WLP300 this time instead of the WLP380.

quick note for ya, I wanted the banana esters so i pitched it straight into the fermenter no starter and fermented at 70F. last years Hefe i fermented at 73F maybe 3 degrees has that much of an effect on the yeast growth? i dont know but i didnt lose a gallon of beer to a blowoff  ;D
Donosborn just put up a video the other day about Banana in a American wheat using imperial yeast. he fermented it at 80F  :o he said it went higher then he planned, but it still turned out great.
