Windsor yeast finished after one day?
« on: August 25, 2018, 09:12:15 AM »
I recently brewed a "harvest ale" a few days ago and pitched a pack of Winsor yeast into it.  I pitched at 72F knowing that the beer would cool down further being in my basement.

However when I woke up the next morning (less than 8 hours after) the airlock was going nuts and reading 80F. I quickly moved the bucket to the air vent and after a few hours it cooled down to 68F, however the airlock all but stopped.

Now I know that airlock activity does not mean fermentation is going on BUT I have never had previous batches using Windsor finish airlock activity that quicky either.

Should I just let it ride out for 2 weeks and see what happens or try to get the yeast going again? My main concern is that it was fermenting too hot for a few hours that there will be a lot of off flavors

Opps Sorry been a while since I been on here, have you checked the hydrometer reading? If it is low like finished I would let it sit for 2 weeks just so the yeast has time to clean up any nasty off flavours that may or not have occurred in the fast ferment. But that’s just my 2 cents. Happy brewing!

you could of put the yeast to sleep dropping the temp also.
let it warm up to 70-73 and see if you get any activity.
in the past i have used windsor yeast and it does ferment like a beast. but never had it finish over night, but i always ferment around 65-70 with most yeasts. it usually took about 3 days, but i always leave my beers for 14 days. like rookie brew said take a hydro and see where it is.
keep us posted

Thanks for the replies everyone 8)

I plan on just leaving it for 14 days and then crossing fingers to see if it turned out ok. I did give the bucket a few twists to see if it helps wake up the yeast.

you might want to take a hydro to make sure the yeast finished or if they stopped from the temp swing, just to be safe. would hate to wait 14 days and find out it didnt finish and is sitting at 1.025 or something. better safe then sorry, IMHO,  got my fingers crossed for ya

I will take a hydro reading just in case.
It has been about a week or so, so should be a good time to check

Just checked the gavity and it is sitting at 1.018. Which puts it at 5.5% according to the OG reading of 1.060

The taste wasnt actually that bad. Mind you I just got back from the dentist and can feel 1 half of my face  :P

I was fearing a bubblegum bomb but it was more on the "hot" side. Going to let it go for the remainer of the 14 days and then bottle it.

Awesome news, wow a quick yeast. Let us know how it tastes once it’s bottled. I’ll follow with interest, cheers!

I ended up bottling the batch about 5 days ago and had a bigger batch than I expected so I had a few extra bottles to use up.

Took a taste last night and it turned out pretty good. Going to let it condition further to how it changes over time. So far so good.
