Combat32's Molasses Porter
« on: October 31, 2018, 09:13:18 PM »
Got some beer mail from Combat32 !

Beer Name:     Molasses Porter

Color:     Black

Carbonation:     Appears to be bottle conditioned.  Great pillowy head.  Long lasting with lots of legs.

Aroma:     Chocolate notes with a hint of roast

Flavor:     Everything you would expect from a typical porter, but refreshingly drier and less malty which makes the IBU rating (unknown to me) stand out.

Mouthfeel:     Full, but not too thick.  Spot on.

Overall Impression:     Porters and stouts typically have a very high IBU rating which is why most tasting rooms have dropped the IBU ratings from their chalkboards because it was scaring customers off.  Combat32's Molasses Porter is definitely less malty / sweeter because I can taste a hint of the bitterness from the hops.  I originally thought the taste was "drier" due to the alcohol content from him possibly mashing at a lower temp, but now I'm not sure.

Very curious what the actual IBU and ABV content is because I love the balance, and I would like to tweak my own porter recipe to make it a little less sweeter / malty.

Bottom line is if you're looking for a porter that is slightly less malty and is slightly drier than your typical store bought porter than this is the recipe for you!

Thx Combat32 for sharing this with me!
Cheers & 17,

thanks Black Dog Brewery,

The IBU's for that porter believe it or not was just over 33 IBU's
my mash was 153F for 75min, I did a mash out at 168F for 10min
bittering hops was .5oz Nugget @45 min 13%AA  .5oz Nugget @30 and .5oz Northern Brewer @FO 9%AA  so not a very big hop bill. i think the bitterness came from the black malt and chocolate, maybe a little from the molasses too.

it was an experimental brew,  next time i do this brew i may add more molasses, i used 8oz next time maybe 10oz. i think the molasses added some simple sugars that may have helped dry it out. I know 8oz in a 5 gallon batch isnt a lot, but i think it made a difference.
I used knottingham yeast rehydrated(which i rehydrate all my dry yeast now) which chewed it down to 1.008 all me beers seem to finish at 1.010 or under, I use US-05 alot, but even my hefe and some others finish that low too. even tested with my other Hydrometer.
when i get home later i will check the OG it was 1.048 so 5.2ish ABV

Thanks, I think it had some of the Molasses flavors, but i think it needed a little more added to the end of the boil. maybe 10-12oz instead of 8oz that i used.

not sure what you mean by "Are those combat still available to those tectonics "
that beer was a experimental brew to see what molasses adds to a recipe.
my brotherinlaw found one bottle in his fridge and said it was still very good.
which i was surprised it didnt get oxidized, but it was in the fridge.
