How long can can beer stay in the primary fermenter
« on: December 16, 2018, 06:50:25 PM »
I started with extract kits and moved over to all grain kits. Most if not all have you in the primary 10-14 days and a secondary for 14 to clear. From researching online it sounds like its not needed unless adding some sort of addition.  If that is true what would be a good guideline for time spent in primary before transferred into a keg? three weeks? I like to condition in a keg for a week before the first pour.  Cheers!! and Thanks in advance!

i use the 14 day method for primary, i used to check gravity on day 10 and 14 to make sure it had finished. which it always was. now i do 14 days without checking, unless i still have a krausen(which is usually slim to none) then keg and let it sit for 3 days then start sampling :)
if you pitch the right amount of yeast and control the ferment temps after 5-6 it is usually done, but the extra time is needed to let the yeasties clean up.

This is an interesting question.  With wine it's best to let it sit in the "secondary" for up to a year, or even more depending on many factors but the gist is to let it clear for that year.  I don't remember much about Beer brewing but I do remember I used to bottle it ASAP!!  With Wine it may look crystal clear but given a month in the bottle and you end up with a carpet at the bottom, hence clearing for a year or more.  Beer being conditioned in bottles you would end up with a carpet of yeast but I have yet to do my first keg so I don't know enough to say anything on the topic in regards to beer.  However, I would want to ask a "secondary" question; Is there a clearing benefit letting beer sit in a secondary for a month or ten?
I know everything there is to know about everything, except that which I do not know that I do not know.

you can let beer sit in secondary for a few weeks, but if bottling you wouldnt want to let it sit for much longer, unless you add yeast at bottling.
cold crashing works great and time once bottled or kegged
