Smoked Porter Yeast Stall

Hello all,

I am brewing a Brewer's Best Smoked Porter kit. It included the crushed grains and unhopped malt syrup. 60 minute hop boil: 55 minute 1 oz. Magnum hops and then 5 oz. of Brewer's Gold hops for last 5 minutes. Added water after wort cooled down to 70 degrees F up to 20 liters. I pitched the provided S05 yeast and gently mixed with a long handle spoon. Next day I see some bubbles as expected and the next day no bubbles! This is after I put the heat belt on bringing the fermenter vessel up to 76 degrees F. I realized that the instructions say to keep in temperature-stable area appox. 64 -72 degrees F. Maybe I killed the yeast?

I then took the heating belt off and brought it down to 65 degrees F. Still no bubbles.

For this type of beer, isn't 64 -72 degrees F fermenting temperature too low? Should I add more yeast? Any advice would be appreciated!  :-\

No you did not kill your yeast at 74f (24c)
18c (64f) is a good temperature to start.

I don't know how long you have been waiting.
But it sounds that all you need is just a little patience.

yeah US-05 is a pretty flexible yeast i usually ferment it at 68F.
is there foam on the top your beer?  I started re-hydrating all my dry yeast last year and it does make a difference in the start of fermentation.
if you have a plastic bucket press on the lid and see if the water in the air lock moves, try and keep a steady pressure and see if it raises then drops back while you hold it down. if it does your lid is not sealed tight.

Thank you Combat32 and Hans! Instructions say not to re-hydrate the yeast. Since it is cold here in NJ, I put the heat belt back on. There are bubbles around the wall of the fermenter, but not a frothing 8" or more above the wort surface as with other brews I have made.

I have a Coopers fermenter, so I don't have an airlock. It is designed so that the CO2 pushes the lid up and releases CO2 in "burps".  I appreciate both your advice and will be patient.  :-\ (sigh).

yup waiting sux  ;)  just curious did you look at the date on the yeast?
i use US-05 in most of my beers, like i said i re-hydrate now. i listen to brew strong on the brewing network and Jamil has said on multiple shows that when you pitch dry yeast almost half the yeast die, when you rehydrate them they release their compounds and make a nice creamy frothy cap. not saying its the law, but i havent had an issue. plus its like proofing bakers yeast. i try and stay on the cooler side for most strains of yeast. just try not to swing the temp more then you have already.
one other thing give the fermenter a gentle swirl just to get it stirred up. i have done that in the past and it has helped kick start it. if you still see nothing happening take a gravity reading and if it is still close to your OG then you might want to repitch more yeast.

 Thanks Combat32. No, I did not notice the date on the yeast packet. I will give it a swirl, as you suggest. Still no activity. If nothing by tomorrow, I'll just add another yeast packet. I just checked, my spare Munton's yeast is expired. Gotta order some tonite!

yeah if you dont see anything yet, probably something with the yeast.
US-05 is usually a beast and starts within 24hrs.
