Problems with WLP830 White Labs German Lager Yeast

Hey Gang, long time no post. Did an all grain DoppleBock about 7 weeks ago and put it into a 20L cube, as we were going away and didn't have the time to ferment it. Thought i'd do things right and go get a proper yeast seeings as the all grain took me 6 hours LOL. Anyways, the instructions on the vial say to do a 2L starter if the OG is 1.065 or higher (mine settled at 1.066) so syphoned 2L of wort into a demi-john and pitched yeast, 24 hours later and no activity, the instructions claim that activity should be present around 5-15 hours. Anyone out there tried this yeast?
tried leaving it outside initially and it was at a constant 20C so tossed it in the fridge @ 10C and still nothing, somewhat perplexed. cheers.

Very odd.

As long as the yeast wasn't pitched into the starter's wort while it was warm (killing off all of the cells), then your first temperature attempt at 20'c (room temp) should have had some activity.

I've never made a lager yeast starter below room temp, so I cannot comment on your attempt at 10'c.

The SG of your wort has plenty of sugars for happy yeast to eat.  I would suggest taking the flask back out of the fridge and keeping it at room temp for another 24 to 48 hours.

If there is no activity, something killed off the yeast cells.  That's the problem, at least here in the USA . . . It could be blazing hot in the south and snow on the mountains in the north.  I stopped buying liquid yeast (when possible) about 5 years ago because there are too many people who can screw up the living cell count before it gets to you.  Using some common names as an example . . .

-  White Labs transfers their yeast "chilled" when it is picked up by the shipping company.

-  The shipping company then ships it to Northern Brewer.

-  Then Northern Brewer stores it until you buy it.

-  Then another shipping company picks it up from Northern Brewer (typically packaged with a cold pack depending upon the time of year) and ships it to you.

-  And then you have to remember to take it home right away, don't leave it in your vehicle or garage, and don't forget to put it in the fridge ASAP.

There are just too many people and exchanges involved.  All it takes is one HOT day sitting in a truck and you are screwed.  Which is why even some of the packs from my LHBS didn't have a viable cell count.

IMOP liquid yeast is costly and a risky purchase.  Especially when you have to make a yeast starter for most 5 gallon batches anyway.

Left starter out over night @ 16C air-lock activity it sluggish but at least its present, can't really see the usual movement of yeast clumps i would expect during fermentation. Dunno if thats just how the yeast behaves or what.

Ive heard WLP830 is a slow starter.

Sluggish is good !

So even if the liquid pack was low on viable yeast cells, you've still got some good yeast cells.  It's just going to take a few days to build the count back up.

Either way that's good news.
