Hi 17 brew crew,

Cheers. I brewed a 5 gallon batch of saison using safbrew abbaye BE-256 (rehydrated in water). It worked well for two days and then the fermentation slowed down. To counter this, I pitched another dry yeast and it worked for a couple of hours, slowly bubbling and then none again. Can my brew still be saved? Thanks.

PS: my temp is fluctuating around 21-24 degrees.

sounds like it may have finished off, can you pull a sample and test the gravity?
some saison yeasts can be beasts. if you mean the temp only change 3 degrees up and down no problem but if the temp swing was 21-24 degrees that would not be good. :)
I've only brewed a couple saisons and they did ferment quick, one even blew out.
if you check the gravity and its finished say 1.015 or less let it sit for at least 10-12 days before you bottle/keg so the yeast can finish cleaning up the beer. let us know if the gravity is over 1.020.

It depends on many factors.
I have a brew on now with Kveik for example. Full krausen after as little as 4 hours. After 18 hours its starting to slow down.
Different yeast, temperature, and wort. The best way to find out is to do gravity readings.
