As I mention in the video you passivate stainless steel to make it stainless.
That layer of chromium oxide that is formed by the passivating process protects the steel from staining. Stainless steel is a mix between iron and chromium and iron is very stainable. That layer also protect the beer from picking up a mineral of taste from the stainless steel. Even though passivating already should have been done when you buy the stuff. It’s an insurance to do it yourself. And as the layer of chromium oxide made by the passivating will get hurt over time. It’s good to know how you do it. All explained in the video. Some other benefits could be easier to clean and more efficient boil. And it makes everything shiny!!!!!!!!!

One thing i noticed on one of my pots after doing a no no, i used a brillo pad to clean it  :-[
next brew day i could see some rust in the pot. I remembered John Palmer talking about Passivating on a podcast. picked up some Bar Keepers friend and scrubbed the spots and coated the whole pot with a film of it. rinsed it out and let air dry. the rust was gone and knock wood it has not returned. also found some rust spots in a keg and did the same thing. i havent done a bath/soak like your video, but i will be looking for the acid to do it.
I only asked because i didnt remember if you said anything about rust. plus i had a few beers too :) thanks for sharing

Hahahaha yes that could be it 😂

Yes passivating protects against rust. Leaving it out in the air will also passivate it. This method just goes quicker. And my sparge water heater had some rust in the bottom by the element. It’s gone after the soak. Leaving it out in the air will not do that. 17
